Make the butter melt, add the salsify and brown them a little.
Add the flour and the bottom of calf. Let them brush a little.
Add the crème fraîche and milk. Stir until the salsify are very tender.
Lower the heat and leave for 5 minutes.
Turn off the heat, put half the grated Gruyèreère, mix, salt and pepper.
Pour everything into a baking dish and cover it with the rest of the cheese.
Bake for 35 minutes.
Serve.
