Flatten the cutlets, then flour them. Season them with salt and pepper.
Beat the eggs in a shallow dish, adding 1 tablespoon of oil. Pour the breadcrumbs into a second dish. Then place the cutlets in the eggs and then in the breadcrumbs.
Melt the butter in a frying pan with 1 tablespoon of oil, then brown the escalopes for 2 minutes over high heat, then let them cook for 3 minutes on each side.
Serve with pasta.
