Peel and cut the onion into rings and the potatoes into cubes, then cook them in a pan. Season with salt and pepper.
Once the potatoes are cooked through, remove everything from the heat and let it drain.
Beat the eggs into an omelet and add the potatoes and onions.
Pour everything into a hot, oiled pan and cook over low heat for 5 minutes on each side.
Serve the tortilla hot or cold.
