Peel the shrimp, removing the heads and shells.
Pour a little olive oil into a saucepan and fry the shrimp heads for 5 minutes, stirring occasionally.
Pour the water over the shrimp and bring to a boil. Add a sprig of thyme, season with pepper, and simmer for 15 minutes.
Remove the thyme sprig, then place a strainer over a bowl to collect the broth by pressing on the shrimp.
Take a clean ice cube tray and fill it with the broth. Place it in the freezer for your next recipes.
