Boil the pieces of fish in a Noilly court-bouillon, but be careful not to cook them completely because they will finish cooking in casseroles in the oven.
To add color and freshness to your dish, cook English peas or a green vegetable of your choice. We recommend large English peas.
Cook the hake pieces over very low heat, covered, for about 7 to 8 minutes, without turning them over and without letting them completely submerge in the water. Once cooked, drain the fish.
Filter the filtered court-bouillon to obtain the Noilly sauce.
Divide the pieces of fish into small casseroles, then pour the Noilly sauce over them and cover them with mixed bread and place the lids on.
Bake at 180° for 8 to 10 minutes and serve.
