Start by peeling the carrots and cutting them into slices or julienne strips. Next, chop the garlic and cut the turkey breast into bite-sized pieces.
In a saucepan of boiling salted water, cook the carrots for about 10 minutes, then drain and set aside.
In a pan, cook the pieces of meat in oil, adding salt and pepper at the end of cooking. Add the fenugreek, coriander, chopped garlic, and cooked carrots. Mix everything well.
Insert the mixture inside the brick sheets and then fold them to obtain the shape of a samosa, which is generally triangular.
Finally, fry the samosas in a deep fryer or in a high-sided pan with oil.
