Peel the celery and cut it into cubes.
Immerse the celery cubes in water and add the lemon juice. Drain them and steam them at least 20 minutes.
Peel the apples, remove the core and the seeds, cut the flesh into dice. Sauté them in 50 grams of butter without crushing them. Pepper then mold the walnut kernels.
Press the celery in puree and heat it in a saucepan over low heat. Incorporate the nuts, the rest of the butter, a pinch of salt, 2 pinches of nutmeg and the diced apples.
Pour the celery puree into a hot dish
