Start by preheating your oven to 180°C. Sauté the spinach in olive oil, then let it cool.
Mix the spinach with the Parmesan cheese, egg, and chopped mortadella. Add a little breadcrumbs.
Cover the bottom of an oiled baking dish with breadcrumbs. Pour in some of the spinach mixture and press down. Grate the Montasio cheese and pour the cheese over the spinach layer.
Cover with the remaining spinach, press down with a spoon and cover with grated Parmesan cheese, season with salt and pepper.
