Season the chicken breasts to taste and sear them in a pan with very hot oil for about 4 minutes on each side.
While the poultry cooks, finely chop the shallot and mushrooms. Once the poultry is cooked, remove it from the pan and set aside. Add the shallot to the same pan and cook over low heat for a few minutes.
Then add the sliced mushrooms to the pan. Once the mushrooms are cooked, pour in the cream and add the Patrelle flavoring. Let the sauce reduce for a few minutes.
Then return the chicken breasts to the pan to reheat them in the sauce. Serve
