The day before, soak the beans in a sufficient quantity of water as they tend to swell.
In a casserole dish, brown the bacon slices, sausage, and sausages in goose fat or olive oil. Set the meat aside.
Sauté the onions and carrots, then add the drained beans, tomatoes and crushed garlic.
Simmer for 2 hours with the chicken stock and bouquet garni. Add salt and pepper, and top up with more stock if necessary.
Add the sausages and salami and simmer for another hour.
