Start by preheating the oven to 180ºC.
Place the buttered slices of bread in a baking dish.
Fold the woodcocks using string.
Spread the skin of the woodcocks with olive oil, strip the thyme and rub it on the skin of the woodcocks.
Stuff each woodcock with the bacon, place each woodcock on its slice of bread, season with pepper and salt.
Bake for 25 minutes.
