Preheat your oven to 200°C.
In a bowl, combine the chopped capers and olives, lemon zest, panko breadcrumbs, olive oil, and optionally chopped basil. Season with salt and pepper.
Melt the butter in an ovenproof skillet over medium heat and cook the mahi-mahi fillets for 1 to 2 minutes on each side.
Sprinkle the Provençal mixture over the fillets and bake for 8 to 10 minutes.
