Start by preheating the oven to 180°C.
Mix the flour, grated Chestnut cheese, butter, salt and cayenne, and add a little water.
Knead the dough and roll it out on a floured surface.
Cut the dough into patties and place them on a baking sheet.
Bake the pancakes for 10 minutes.
In a saucepan, heat the crème fraîche with the salt, cayenne and grated nutmeg.
In a bowl, beat the egg yolks, then add the hot cream while stirring.
Pour the mixture back into the pan and cook for a few minutes.
Let the cream cool, then whisk in the grated Chester cheese and butter.
Once the pancakes are cooked, spread them with a layer of cream.
