Start by preheating the oven to 200°C.
Steam the endives for 2 minutes then drain them.
Place a slice of ham on each endive and roll them up.
Place the endives in an oiled dish.
In a bowl, whisk the eggs, then add the crushed Gervais squares.
Pour in the light cream and chopped chives and mix.
Pour the mixture over the endives, then sprinkle with grated cheese.
Bake for 35 minutes.
