Start by preheating the oven to 240°C.
In a saucepan, sweat the chopped shallots with butter, pour in the cream and mustard.
Let it cook for 10 minutes, then set it aside.
Take some bison steaks and place them in a dish and season them with salt and pepper.
Bake until the meat is rare or medium (your choice).
Serve the steaks with Stroganoff sauce.
