Start by preheating the oven to 200°C.
Roll out the dough in a buttered and floured mold and prick it.
Sprinkle it with beans and bake for 15 minutes.
Mix the cream with the chopped chives and flat-leaf parsley and season with spices.
Steam the potatoes and cut them into slices.
Spread a layer of the cream mixture on the tart base and spread the potato slices on top.
Add a little cream between each layer, then finish with the Langres slices.
Bake for 20 minutes.
Arrange onion slices on top before serving.
