Start by mixing the mustard, roast juice, Armagnac, Worcestershire sauce, and water. Season with salt and pepper.
Let it boil, then pour in the cream.
In a frying pan, heat the butter and add the tournedos. Simmer for 3 minutes.
Season with salt and set aside.
Add half of the mustard sauce to the pan, stir, and add the remaining sauce. Let it cook for a few minutes.
Pour the sauce over the meat before serving.
