Start by peeling and grating the pumpkin, then set it aside.
In a saucepan, dissolve the vegetable stock cube in 1 liter of water and bring to a boil before setting aside.
In a casserole dish, heat olive oil and add the pumpkin to melt over low heat for 20 minutes, stirring occasionally.
Meanwhile, wash the rice in clean water and add it to the pot. Mix well before adding the vegetable stock.
Simmer over low heat until the rice has absorbed all the water, which takes about 30 minutes.
Serve piping hot.
