Toast the pine nuts in a non-stick pan.
Peel the avocado and cut it into strips. To prevent them from browning, sprinkle them with lemon juice.
Wash and spin dry the arugula.
Thinly slice the tomatoes and ham.
Arrange all the ingredients on each plate.
Prepare the sauce by mixing olive oil, cider vinegar, mustard and a pinch of salt.
Sprinkle the plates with pine nuts and serve with the sauce on the side.
