Before starting preparation, preheat the oven to a temperature of 200°C.
Finely slice the shallots and brown them in butter before placing them in an ovenproof dish.
Sprinkle half of the herbs over the shallots and gently place the fish on the platter. Sprinkle with white wine, water, and a squeeze of lemon, then season with salt and pepper.
Bake everything in the oven for about 30 minutes, making sure to baste the fish regularly.
Once cooked, remove it from the dish and keep it warm.
For the sauce, reduce it before adding crème fraîche and the remaining herbs.
Coat the pike with this sauce and serve immediately.
