Preheat the oven to 120°C.
Wash, dry, and halve the tomatoes; optionally remove seeds.
Set on a tray, drizzle with olive oil, sprinkle with herbs and a pinch of sugar; season with salt and pepper.
Bake for 120 minutes until soft with lightly caramelized edges.
Let cool slightly, then store covered with a little oil.
