Cut the 135 grams of butter into pieces and melt over low heat in a saucepan.
Prepare the apples by washing them, peeling them and cutting them into small dice. Put them to cook in a pan and add the rest of the butter and the sugar. Cook over low heat for ten minutes, stirring regularly with a spatula. Stop cooking when the apples go golden.
In a bowl, whisk the egg whites until a slightly frothy consistency.
Add the icing sugar, melted butter, almond powder, honey and continue the mixture until you have a smooth and homogeneous paste.
Preheat the oven to 200°C and butter a mold
Add the apples to the dough and bake for 30 minutes. Check the cooking using a knife or a spike.
Sprinkle the cake with icing sugar and taste warm.
