To start, clean the mushrooms well if they are too earthy,
Rinse them quickly with lemon water and drain them
Then peel the onions
Take a large saucepan, pour the vinegar into it
Add 5 liters of water, pepper grains, thyme strands and bay leaves
Boil the mixture
Add the mushrooms and onions
Bring to a boil again
Cook for 1 minute after boiling then drain them
Put the mushrooms and onions in one or more airtight glass containers
Pour the olive oil into each jar and add 1 tablespoon of salt. Note that olive oil must completely cover the mushrooms
Close the jars well and set aside in the refrigerator at least 48 hours before tasting.
