In a bowl, pour 5 centilitres lukewarm to dilute the yeast, let stand for 10 minutes
Then put the flour, diluted yeast, water, Provence herbs, olive oil and salt in the robot bowl and mix
Work the dough for 10 minutes
Cover the bowl with a clean cloth
Let the dough rest for 2 hours in a warm place
Meanwhile, brown the bacon without fat in a pan
Add the drained bacon to the dough and work it quickly
Divide the dough into 2 dough people
Make an incision using a knife
Preheat the oven to 200°C
Sprinkle the fougasses with grated cheese, put in the oven for 20 to 30 minutes. Note that you can coat the fougasses with a little olive oil and sprinkle with a pinch of Provence herbs before baking them. Fougasses must be golden brown.
