In a large bowl, make the dough by beating the eggs and gradually pouring the flour, milk, melted butter and salt. Reserve cool for 1 hour
Make the Béchamel sauce by melting the butter in a saucepan. Pour the flour and mix with a spatula to obtain a homogeneous mixture.
Gradually incorporate the milk while continuing to stir. Decrease the fire until the sauce thickens. Finish by adding the egg yolk, cheese and ham dice
Cook the pancakes at the pancake. Place a spoon of sauce in the center of each pancake, roll and fold.
