Boil the beans previously soaked in a saucepan containing 3 liters of water.
In another saucepan, make a broth with 3 liters of water, the rind, carcass and/or bones, onions and carrots. Recover the covers after an hour. Then pour the beans so that they cook
In a frying pan, brown the meats one by one and reserve them
In a hollow terracotta dish going in the oven, alternate the rinds, drained beans and meats
Cover the hot broth dish and meat cooking juices
Sprinkle with pepper and pour a tablespoon of duck fat.
Cook for 3 hours in an oven heated at 160°C. Add broth if the beans dry.
