In a bowl, pour the flour, sugar and salt, then mix everything
Make a well in the center of the mixture, then add half the yogurt and the baking soda. Mix these two ingredients well and let the bicarbonate act for a few minutes
Add the oil and the rest of the yogurt, then mix everything well
Add the lukewarm water and knead the dough until it becomes smooth and not sticky
Cover the dough with a cling film and a clean cloth, then let stand between 3 and 4 hours
Knead the dough again, and then divide it into 4 identical balls
Make a hollow in the center of each of them and place a piece of melted cheese. Close by always making a ball
Heat a tawa or an adhesive pan
On a floured work surface, spread each ball using a pastry roll, then with a fork, prick the surface of the dough
Mix the chopped garlic + chopped coriander and sprinkle the surface of the dough. Press with your fingers so that this mixture adheres well to the dough
Turn the dough over and spread it again
Make sure the pan is hot
Sprinkle the top of the dough with water and spread it on the hot pan so that it adheres to the latter
Cook over high heat. When the dough cooked from below, take the pan and turn the dough to cook it on the other side and swell it
Take off the dough using a spatula, place it on a plate and coat it with butter or ghee
Repeat these operations for the other 3 dough balls
Serve hot or warm up.
