In a bowl, dilute the yeast in 5 centilitres of lukewarm water, then let stand for 10 minutes.
Then mix the flour, diluted yeast, water, Provence herbs, olive oil and salt in the robot bowl.
Knead the dough for 10 minutes.
Cover the bowl with a clean cloth and let the dough rise for 2 hours in a warm place.
Meanwhile, brown the bacon in a pan. Drain them and put them on the dough.
Quickly work the dough, then separate it into 2 dough people.
Increase each dough using a knife.
Preheat the oven to 200°C. Sprinkle the fougasses with grated cheese. Put them in the oven at 200°C for 30 minutes. Before baking the fougasses, you can coat them with a little olive oil and sprinkle with a pinch of Provence herbs.
