Preheat the oven to 180°C.
Pour the olive oil into a gratin dish.
Cut the mozzarella into slices.
Remove the ends of the eggplants and cut them into thin slices.
Place half in the gratin dish.
Cover with half of the mozzarella, salt, sprinkle half of the Provence herbs and sprinkle with half the coulis.
Make a second thickness with the eggplants, salt, put the other half of the mozzarella, the 2nd tablespoon of herbs and sprinkle with the rest of the coulis.
Put grated cheese.
Bake for 1 hour.
Serve.
