Put the butter and oil in a casserole dish. Heat and brown the onion and celery cut in the middle heat for 3 minutes before adding the mushrooms. Always cook over quite high heat for 5 minutes then add the white wine.
Add the chopped garlic clove, thyme, chicken broth and cook covered for 15 minutes.
Add the cream and cook for another 2 minutes.
Salt according to your taste and remove the strands of thyms before going to the blender.
Serve hot. (You can book a few mushrooms for the decor before going to the blender).
