Mix the 2 flours and salt. Add the water as you go. Mix until you get a ball of dough. You must have a non -sticky but flexible dough.
Let stand for 1 hour covering the dough.
Detail pastures of about 50 g, spread to the roller on a floured plane. You should get patches that are not too thick.
