Mix the flour55, sugar, salt and baker's yeast. Add the water to room temperature and mix. The dough is sticky, do not add flour.
Cover the bowl with a cloth and let out for 2 hours, while the triple volume dough.
After these 2 hours, flour the worktop with the 2 tablespoons of flour. Turn over the dough over, degas the dough, fold it down and place it in a baking dish. Stretch it so that it occupies the entire area of the dish.
Once you've almost spread it out, pour olive oil over the dough, sprinkle with rosemary and fleur de sel then break your fingers into the dough to form the small holes.
Leave to rise again 1h30 in the dish.
Sprinkle further with rosemary and distribute a tablespoon of olive oil on the dough, and 2 teaspoons of water.
Bake in an oven preheated to 200°C for 25 minutes. Cut and serve.
