Brown the minced onion in the butter. Add the garlic, 3/4 of minced mushrooms and the chopped celery. Salt and pepper and cook for 2 minutes.
Add the flour, poultry broth and tarragon. Cook for 15 minutes.
Mix everything in the blender.
Return to the heat and bring to a boil. Add the rest of the mushrooms and the cream. Cook for another 5 minutes.
Serve.
