Peel and cut the salsify. Cut them into sections. Cook them in boiling salted water for 20 minutes. Drain them, then set aside.
Melt the butter, add the flour and mix. Add the milk, then mix. Cook for 2 minutes over low heat, stirring.
Salt, pepper then add the cream and bring another 2 minutes to a boil.
Add the salsify to the sauce and coat them from the latter.
Arrange the salsify with cream in and sprinkle with parsley.
Serve.
