Butter a pie dish and preheat the oven to 210°C.
Clean and finely chop the leeks, then sauté them in oil over low heat for 20 minutes. Season with salt and pepper.
Mix the cream with the eggs and the yolk and beat them before adding the leeks, salt, pepper and mix everything together.
Line the mold with dough then add the leek mixture to the mold and bake for 35 minutes.
Serve with a salad.
