Take a nice haunch of venison previously marinated for 48 hours in a vacuum pack for greater effectiveness, then remove the bone from the haunch.
Inject the marinade into the raw meat using a syringe to save time and efficiency, then tie and possibly bard the meat.
Sear the meat in hot butter on both sides without salting or peppering the surface, as the injected marinade is sufficiently flavorful.
Then cook the meat in the oven for 25 to 30 minutes at 180°C, turning it over and basting it regularly.
Let the meat rest for a quarter of an hour at room temperature to cook it pink to the bone.
Serve the meat with cranberry sauce or game sauce or with vegetables.
