Start by rehydrating the soy protein in boiling water for 5 minutes on the stove, then let it sit off the heat for another 15 minutes.
Meanwhile, slice the onion and carrot, fry them in olive oil until lightly browned, then add the drained soy protein to the pan with red wine.
Let the liquid evaporate completely before adding the tomato puree and brown sugar. Let it cook for a few more minutes and adjust the seasoning if necessary with salt and pepper.
While the sauce simmers, cook the spaghetti until al dente.
Serve the spaghetti on a plate and add the soy protein sauce on top.
