Start by finely chopping the shallots and slicing the tomatoes.
Pour oil into a baking dish and tilt it so that the oil is evenly distributed. Arrange the chopped shallots at the bottom of the dish, then the tomato slices, and finally the fish fillets.
Place the dish in the oven at 180°C for 20 minutes.
A few minutes before the end of cooking, you can add a drizzle of crème fraîche to the fish to give consistency to the sauce that has formed.
Return the dish to the oven for a few minutes and serve with baby potatoes or rice.
