Start by preheating the oven to 210°C.
In a bowl, mix the chopped mint leaves, crumbled feta, Kiri cheese, pine nuts, olive oil and eggs.
Season with salt and pepper.
Arrange the brick pastry sheets and coat them with melted butter.
Place a small amount of the mixture in the center. Close the brick sheets into a triangle.
Bake for 15 minutes.
