Start by preheating the oven to 210°C.
Heat the sausage meat and chopped onion with a little oil.
Boil the semolina bag in water for a minute and a half, then put it in a bowl.
Add the sausage mixture to the bowl, along with the chopped mint and a little oil.
Season with salt and pepper.
Slice the peppers in half, remove the core, and stuff them with the mixture.
Spread slices of caciocavallo on top and sprinkle with Parmesan.
Bake for 20 minutes.
