Take a shallow dish and mix coconut milk, lime juice, vinegar, grated coconut, sugar, chili puree, coriander and cumin.
Rinse the emperor fillets and pat them dry with paper towels. Coat them several times in the mixture and let them marinate in the refrigerator for one hour.
Preheat the oven and cut squares of banana leaf and brush them with oil.
Place a fillet of emperor on each square, sprinkle them with the marinade, salt lightly and fold the sides of the leaf to form small parcels which you will tie with raffia.
Place them in a baking dish and bake for 15 to 20 minutes.
Serve immediately with white rice.
