Start by cutting the chicken fillets into 4 pieces.
Brown the chicken with oil and butter for 5 minutes, then remove.
In the same casserole dish, fry the chopped onions and chopped ginger for 5 minutes.
Add the chicken to the casserole dish and season with salt and pepper.
Add 20 cl of hot water and the stock cube, simmer for 5 minutes.
Grate the zest of half a kaffir lime, add it to the casserole dish, and continue cooking for 10 minutes.
Sprinkle the dish with the remaining kaffir lime zest and serve.
