Start by preheating the oven to 170°C.
Whisk together the St Florentin, 400g of sugar, 7 egg yolks, 50g of margarine, 100g of flour, the vanilla, the yeast, the lemon juice and zest, a tsp of salt and the raisins.
Add the beaten egg whites to the mixture.
Mix by hand 200g of flour, 100g of sugar, one whole egg and one yolk.
Roll out the dough by hand in a buttered dish and pour in the St Florentin mixture.
Bake for 45 minutes.
