Start by cutting the roots into strips.
Let them soak in water with vinegar.
Roast the sesame seeds.
Mix the mirin, soy sauce and sugar, then season with salt and pepper.
Fry the chopped garlic in sesame oil, add the roots and simmer for 5 minutes.
Pour the soy sauce mixture over the roots and stir.
Continue cooking for 5 minutes.
Sprinkle with sesame seeds and chopped coriander before serving.
