Start by steaming the cheese for 20 minutes.
Meanwhile, boil the cut potatoes in salted water for 20 minutes.
In a frying pan, heat the butter and add the black salsify. Let it sweat for a few minutes.
Mash the potatoes and black salsify and add the crème fraîche.
Season them with pepper, salt and nutmeg.
Sprinkle with chopped chives before serving.
