Before you begin, preheat your oven to 200°C.
Oil the bottom of a baking dish with olive oil. Arrange the pollock fillets in the dish and season with salt and pepper.
In a salad bowl, mix the cream, mustard and aromatic herbs.
Cover the fillets with this mixture so that they are completely hidden.
For decoration, cut a small tomato into cubes and place it on top of the mixture.
Bake for 30 minutes.
