Clean the carrots and place them in a pan with butter. Add honey, salt, pepper, and thyme, then cover with water.
Cover the pan with baking paper with a few holes in it and let it cook for about 20 minutes.
Remove the paper and continue cooking until the liquid has almost completely evaporated.
Sprinkle with flax and sesame seeds and serve hot.
