Prepare the conch by cleaning and cutting it into pieces.
In a large casserole dish, cook the conch and bouquet garni in oil over very low heat for 25 minutes.
Meanwhile, finely chop the onion and garlic.
Remove the bouquet garni from the casserole dish and add the onion, garlic, spices, chili paste, water, salt, tomato pulp, and lemon juice.
Simmer over low heat for 25 minutes.
Before the end of cooking, add chopped parsley and cane sugar.
Serve hot.
