Season the perch fillets with local herbs and pepper. Fry them in a little butter and keep warm.
In a frying pan, melt 250g of butter and add finely chopped garlic, parsley, and chives. Then pour in the juice of one lemon and white wine, then mix everything together.
Add the perch fillets and heat them over low heat for one minute.
Serve with rice and steamed vegetables.
