Preheat the oven to 200°C and line a baking tray.
Cut assorted vegetables into even chunks (carrot, zucchini, pepper, onion, eggplant).
Toss with olive oil, salt, pepper and herbs; spread in a single layer.
Roast 40–45 minutes, turning once, until tender and caramelised.
